- Aged 12 years Islay Single Malt Whisky. Out of sight, in a remote cove near Port Askaig lies Caol Ila, hidden gem among Islay's distilleries since 1846. Not easy to find, Caol Ila's secret malt is nonetheless highly prized among devotees of the Islay style. Caol Ila's name (say "Cull Eela") comes from the Gaelic for "Sound of Islay". Built in 1846 near Port Askaig, the costly establishment of this remotest of coastal Islay distilleries bankrupted Hector Henderson, it's first owner. However, the single malt made in this hidden cove, although never easy to find, was always sought out for its combination of an unmistakable Islay character with sublime drinkability. Typically pale golden and peated, today's Caol Ila remains true to its traditions. Not as pungent or heavy as some of its neighbours and remarkably fresh-tasting, it is yet deceptively intense on the finish. It has all the fresh sea-air aromas and smoky-dry spicy flavours of an expressive, APPETISING Islay malt. Caol Ila lies close to Loch nam Ban, source of its pure mash water. The sea provides water for cooling and once brought steamers to collect a whisky appreciated for its balanced, fresh style - lighter-bodied than many Islay malts, yet with all their typical peatiness.
